Ingredients

Crispy Italian Pepper Wings

  • 2 pounds mixed party wings
  • 1 tablespoon baking powder
  • kosher salt
  • black pepper
  • 1 tablespoon olive oil
  • 1 tablespoon pepper paste L'Amante Hot Pepper Paste
  • 4 ounces unsalted butter
  • 1 lemon divided

95% Sauce Lemon Pepper Wings

  • 2 pounds mixed party wings
  • kosher salt
  • black pepper
  • 4 tablespoons lemon pepper rub
  • 1 lemon sliced into wedges
  • 95% Hot Sauce for dipping

Preparation

Crispy Italian Pepper Wings

  • Pat chicken wings dry with a paper towel, add to mixing bowl and toss with baking powder, salt and pepper to get an extra crispy exterior.
  • Lightly grease air fryer basket, lay chicken wings in a single layer. Fry at 450 degrees for 7 minutes, flip wings and cook again for 7 minutes. Or until crispy, golden brown, and cooked through. Repeat until all wings are cooked.
  • In a saucepan over medium heat, add olive oil and wait until shimmering. Add in pepper paste and stir using a wooden spoon until fragrant, add in garlic, stir and cook until fragrant.
  • Add in butter and melt, using wooden spoon to scrape up any bits that may have stuck to the bottom. Once butter is melted, squeeze in the juice of half of a lemon. Slice the remaining 1/2 for garnish.
  • Add wings and sauce to a large mixing bowl and toss to coat. Serve with lemon wedges for garnish.

95% Sauce Lemon Pepper Wings

  • Pat wings dry with paper towels and add to a mixing bowl.
  • Toss wings with a good pinch of kosher salt, black pepper, and lemon pepper seasoning.
  • Lightly grease air fryer basket, lay chicken wings in a single layer. Fry at 450 degrees for 7 minutes, flip wings and cook again for 7 minutes. Or until crispy, golden brown, and cooked through. Repeat until all wings are cooked.
  • To serve, place a ramekin of 95% sauce and lemon wedges for garnish on a plate and add chicken wings.
