Ingredients
Chai Hot Toddy
- 2 cups water
- 2 tablespoons Chai For Chai Mix or Dry Chai
- 1 tablespoon honey divided
- 2 tablespoons orange juice divided, to taste
- 2 tablespoons lemon juice divided, to taste
- 3 ounces whiskey divided, optional
- cinnamon stick for garnish
- lemon wheel for garnish
Lemon Ginger Concentrate
- 10-12 ounces fresh ginger cut into strips
- 1 lemon zest peeled into strips
- 1 cup lemon juice freshly squeeze and strained
- 3/4 cup water
- 1/4 cup honey or sugar
- 1/4 teaspoon cayenne pepper optional
- 1/4 teaspoon kosher salt
Preparation
Chai Hot Toddy
- In a saucepan over medium heat, add in water and chai mix. Stir and bring to a simmer. Once at a simmer, lower heat and let sit until chai flavors have developed (about 5 minutes). Turn off heat.
- In the bottom of two mugs, equally divide the honey, orange, lemon juice, and optional whiskey.
- Using a colander to strain out tea solids, strain tea into both mugs.
- Mix each glass to combine, garnish with cinnamon stick and lemon wheel.
Lemon Ginger Concentrate
- In a saucepan over medium heat, add in in chopped ginger, lemon peels, lemon juice, water, honey, cayenne, and salt. Mix to combine and bring to a boil, then reduce heat and simmer until mixture has darkened and reduced slightly - about 30 minutes.
- Place a coffee filter or cheesecloth into a fine mesh sieve, strain mixture into jar or other heat proof container. Using a wooden spoon, press mixture to release extra liquids.
- To serve:Hot: Place about 2 tablespoons of concentrate into a mug and top with hot water, stir to combine.Chilled: fill a glass with ice, add 2 tablespoons of tonic and top with soda water
- Store concentrate in an airtight container in the fridge for 7-10 days.
